Craving Cheetos?

Since Cheetos aren’t gluten free, I have the best next thing to fulfill that craving!  Trader Joe’s sells Baked Cheese Crunchies.  They have about the same amount of crunch, flavor, and cheese that remain on your fingers!  Also here is the link to all of the products in Trader Joe’s that are gluten free!

You Won't Believe It!!

Yes it’s true….Ben & Jerry’s ice cream is gluten-free!!! At least most of my favorite flavors are!!! No more alternative ice cream!!! So let’s all scream for ice cream!!!

First off, I’d like to say that I am not a medical doctor and my answer is only a suggestion.  (I need to say this on all my posts before responding because of legal issues.)  Gaining weight from a gluten free diet is typical.  I noticed that after a month of starting a gluten free diet that I gained about 5 pounds.  The reason “why” we gain this weight is due to amount of fat in each product.  

Gluten free products use a lot of substitutes.  You may noticed that most of the substitute products are actually very dense.  For example, if you are on a gluten free and dairy free diet and craving ice cream, a substitute ice cream product may be made out of coconut milk.  Coconut milk is very high in fat.  To fulfill that ice cream craving try sorbet or make homemade juice popsicles.

 For “real” food try eating more salads with protein (meat, chicken, fish, beans, etc).  The protein will keep you full and the greens will help your digestive system.  Less calories, less fat, less weight gain.

Anonymous asked: Hi! I'm left with no answers and nobody to ask more to at the time. My celiac test results came back negative. Should I continue to eat GF or wait for more answers?

First off I’d like to say that I am not a medical doctor and my answer is only a suggestion.  If you have noticed that eating gluten free has not caused any symptoms that are related to Celiac, I suggest that you stay on a gluten free diet.  Always get a second opinion by finding another doctor to see if he or she has other tests or advice.

Brown Fried Rice!

Finally…the recipe for gluten free brown fried rice is here!  

What You Need:

  • Coconut Aminos (here’s a link for more info http://www.coconutsecret.com/aminos2.html) It’s a soy sauce substitute!
  • Leftover Brown Rice (you can use any gluten free rice!)
  • Diced Onions (Green or White work best!)
  • Frozen Corn 
  • Frozen Peas
  • Frozen Carrots
  • Crushed Garlic (optional) 
  • Olive Oil (less calories than using a Gluten Free Butter)
  • Pepper (optional)
  • Egg (optional) 

Here’s What To Do:

  1. Scramble a few eggs in a pan.  Once cooked, keep off to the side. (This is optional)
  2. Drizzle olive oil into a Wok.  If you don’t have a Wok use a pot that you would typically boil noodles in.
  3. Saute crushed garlic and onions with the olive oil.  This step is optional but it gives the brown fried rice extra flavor.
  4. Put frozen corn, frozen peas, and frozen carrots into the pot.  Cook for about 5 minutes.
  5. Pour about 2-3 tablespoons of the Coconut Aminos over the leftover rice.  (For ever cup of rice, add 1 tablespoon of the Coconut Aminos.)
  6. Cook the fried rice until it is dry and no moisture is present from either the frozen vegetables or Coconut Aminos.
  7. Add your scrambled eggs and stir to combine.
  8. If you want, garnish the fried rice with a little pepper.
  9. Enjoy!

This gluten free brown fried rice is perfect for any meal or gathering! The best part: it doesn’t even look or taste gluten free! 

For some reason the brown fried rice recipe couldn’t upload over the weekend so I will try again tonight! Thank you for being so patient.

Also, I have never been a huge fan of cereal but I must say that Chocolate Chex with Chocolate Almond milk for breakfast is quite delicious! You MUST try it!!!
